What is your favorite thing about the Holidays?
My favorite
thing about the holidays is spending time with friends and family. When it can
be a super busy and stressful time of year, being surrounded by the people I
care about keeps me sane.
What inspired you to write this Christmas story?
I love
Christmas and am totally a holiday story junkie. This time of year my Kindle is
full of Christmas and holiday themed stories. I was inspired to write A
Chris-mas Miracle based on my own experience as an exchange student overseas
during the holidays. Being so far from home can be lonely, but when you spend
it with your friends and made family you often find yourself making new
traditions.
What's one of your favorite things to do for Christmas?
The Easiest Holiday Fudge Recipe Ever!
(I’ve adapted this recipe from The Pioneer Woman Blog but
I’m not a big fan of the crushed peppermint candies, so here’s my take on it)
- 3 cups Chocolate Chips
- 1 can (14 Oz. Size) Sweetened Condensed Milk
- Whatever kind of candy or nuts you might enjoy sprinkled onto the fudge. I use crushed Andes mints or also a variation of walnuts and mini marshmallows.
Directions
Line a square 8 x 8 pan with foil and smooth the surface as
flat as you can with your hand. Spray foil with nonstick spray to keep the
fudge from sticking.
Combine the chocolate chips and sweetened condensed milk in
a double boiler over medium heat. Heat until melted, about 5-7 minutes. You can
also try this in the microwave and follow the directions on the package for
melting. Stir until smooth, then pour it into the foil-lined pan. Use a spatula
to smooth the surface, then sprinkle on the nuts or candy pieces on top.
Refrigerate for 2 hours, lift the entire brick of fudge out
of the pan by the foil, then cut into small squares.
You’ve just made fudge!
