#Friday Happy Author Hour! Share a drink with your favorite #Authors! #HappyHour #writing Today with Pelaam

Whether you're an author or not, you've heard it before: All authors drink.

But what do they drink?

It's Friday guys!Christmas is around the corner and we could all use a yummy drink, no? Pelaam brings that today...a special kind of Cosmo you'll enjoy!

I love a Cosmo cocktail. Elegant, sour, and delicious, it's the perfect cocktail for a summer evening, sitting out in the garden with friends when having a get together.

Here in New Zealand we have our twist on the classic using feijoa vodka. Feijoa is a love it or hate it fruit native to New Zealand with a unique flavour.

Feijoa  Cosmo

FOR 1 SERVING
2 ounces (1/4 cup) feijoa vodka
1/2 ounce (1 tablespoon) triple sec
3/4 ounce (1 tablespoon + 1 1/2 teaspoons) cranberry juice
1/4 to 1/2 ounce (1 1/2 teaspoons to 3 teaspoons) fresh lime juice
1 2-inch orange peel/twist
Ice

FOR 1 Serving
1.       Fill a cocktail shaker with ice then add vodka, triple sec, cranberry juice and lime juice. I like the extra bite of extra lime juice, so I use 1/2 an ounce in my cosmopolitan cocktails. However, use what is best for your taste.
2.       Shake the cocktail shaker for about 30 seconds until well chilled. Then, strain into a martini glass.
3.       Garnish with orange peel/twist. For an extra burst of flavor, peel the orange twist over the filled cocktail glass. This way, the orange oils spray into the glass.

I would have this cocktail with some elegant finger food. Blinis topped with smoked salmon and a dot of crème frais. A good paté or camembert cheese served with crispy crackers. Olives. Grilled prawns with a lemon aioli dip.

#Friday Happy Author Hour! Share a drink with your favorite #Authors! #HappyHour #writing Today with Pelaam

Whether you're an author or not, you've heard it before: All authors drink.

But what do they drink?

Happy Friday, my lovelies! I've got two awesome recipes today, all brought to you by the lovely, Pelaam! Read on to learn how to make a Mojito and some Chilli!

My Drink - Mojito

The recipe below is Bacardi's own – I love Bacardi white rum best of all. I quite like Bacardi with fresh orange juice, but the mojito is a perfect summer cocktail. When it come to making my own mojito, or having it prepared in a local bar, I like less sugar, and an extra squeeze of lime and also a swirl of reposado tequila to top it off.

The drink is perfect for the warm summer evenings here in New Zealand. Long, fresh, and cool with the beautiful scent of mint. Gorgeous.
2 parts BACARDÍ Superior rum
4 lime wedges
12 fresh mint leaves
2 heaped tsp of caster sugar
1 part soda water/club soda
Sprig of fresh mint to garnish

Method

Gently press together the limes & sugar. Bruise the mint leaves by clapping them between your palms, rub them on the rim of the glass and drop them in. Next, half fill the glass with crushed ice, add the BACARDÍ Superior rum & stir. Top up with crushed ice, a splash of soda and a sprig of mint.

This is my twist on a popular chilli recipe

Pork & Bean Chilli Verde
Makes: 4 servings, about 1 1/2 cups each
Active Time: 20 minutes
Total Time: 30 minutes
Ingredients
  • 1 pound ground pork
  • 1 large red bell pepper, chopped
  • 1 large onion, chopped
  • 6 cloves garlic, chopped
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1/4 teaspoon cayenne pepper, or to taste
  • 1 16-ounce jar green salsa, green enchilada sauce or taco sauce
  • 1/4 cup water
  • 1 15-ounce can pinto or kidney beans, rinsed
Preparation
  1. Cook beef, bell pepper and onion in a large saucepan over medium heat, crumbling the meat with a wooden spoon, until the meat is browned, 8 to 10 minutes. Add garlic, chili powder, cumin and cayenne; cook until fragrant, about 15 seconds. Stir in salsa (or sauce) and water; bring to a simmer. Reduce heat to medium-low, cover and cook, stirring occasionally, until the vegetables are tender, 10 to 15 minutes. Stir in beans and cook until heated through, about 1 minute.
